The apples this season are from our friends at Barnard's Orchards in Kennett Square.

Varieties available - Stayman, Jonathan, Fuji
STAYMAN - is a medium-sized, roundish apple with a thick, greenish-yellow skin covered almost entirely with a deep red blush, darker red stripes, and russet dots. Firm, tender, finely textured, juicy, crisp, and yellowish-green, the flesh is tart and spicy. They keep very well, and are used primarily as dessert apples, but also make a fine addition to blended cider.
JONATHAN - is an heirloom variety best known for how juicy it is and is often used for cidering. It has a sweet and sour flavor suited for fresh and cooked preparations, but is not as crisp as many varieties when used raw. The apples cook down well so are an excellent choice for apple sauces and other recipes when you dont need a cooked apple to hold its shape.
FUJI - continue to be an unrivaled best-seller. Prized for their crispy texture and intense sweetness, fuji apples are a good choice both eaten raw and in cooked recipes where you want your apples to retain their shape, crispness and provide a sweet flavor.
MUTSU - is aromatic, sweet, and sharp, with juicy flesh. It is suitable for eating on its own, juicing, drying, or cooking, as it maintains its shape well when cooked. Its sweet and delicately spiced flavor works well in both sweet and savory recipes. Mutsu are also known as Crispin Apples
