Rhubarb Bars

Makes - 9x13 pan - approx 24 bars

Total Time - 1 Hour



1-1/2 Cups Flour

1/2 Cup Powdered Sugar

1 Cup Butter, cold, cut in to small pieces


3 Eggs

2-1/4 Cups Sugar (can be cut back if you don't want it overly sweet or substitute in some strawberries)

3/4 Cup Flour

3 Cups Rhubarb, finely diced (variation - use half Rhubarb and half diced Strawberries)

TOPPING (Optional)

1 Cup Oats

1Cup Pecans, chopped


  1. Stir together flour and sugar.

  2. Cut the butter into the dry ingredients

  3. Pat this mixture in a greased 9x13 pan.

  4. Bake at 350 degrees for 10-15 minutes. It should be set but not browned

  5. While the crust is baking - Make the Filling and Topping

  6. For the Filling, beat together the eggs, sugar and flour

  7. Stir in the Rhubarb (and Strawberries if using a mix of fruit).

  8. For the optional topping, combine the Oats and Pecans in a separate bowl

  9. Pour the filling mixture evenly over the hot crust and cover with the optional topping

  10. Bake at 350 degrees for 40 minutes until set
